Take a shallot onion peeled and cut in diced.
Take a button mushroom washed and cut in diced.
Take a pan add half quantity butter and half quantity of olive oil heat add mushroom pcs saute for 2 minutes and keep a side.
Take a pan add half butter and half olive oil heat,then add spring onion and spring garlic,salt,black pepper,garlic and rice mix well and saute for 5 minutes then add 1 cup of stock then 1 cup stock r absorb (this process 5 types repeated).
After one hour mushroom risotto r ready.
Serve garnish Parmesan cheese and chives.
